Apar mai multe probleme la mine cu metoda asta.
Poate ar trebuii sa le discutam, ca nu cred ca nu le avem aproape toti, si nu-s chiar simplu de rezolvat.
Printre altele, procurarea ingredientelor, calitatea carnii, prepararea si congelarea, care pun probleme deosebite.
Pentru mine procurarea carnii proaspete e intotdeauna problematica, pentru ca primesc de fiecare data carne mai veche in amestec cu cea proaspata, si am patit sa mi se vanda chiar si care a fost congelata peste sfarsitul saptamanii si decongelata la scurt timp inainte de a trebuii s-o preiau. Bineinteles ca aceasta se altereaza vertiginos in timp ce incerc s-o curat, asa ca aterizeaza in toneta de resturi menajere.
O alta problema apare cand pun placile in congelator, pentru ca nu le pot lasa pana le termin pe toate de pus in pungi si trebuind sa deschid de fiecare data usa congelatorului se ridica temperatura in el.
O lada frigorifica e mai buna, sau cel putin un congelator cu sertare, (nu cu gratii!) din care sa nu cada aerul rece cand se deschide usa.
Daca faceti mai putina mixtura se poate aseza direct pe gratarele frigorifice, cel putin pana se congeleaza.

Eu la mixtura folosesc inima de cal.Avand carmangerie,am posibilitatea sa fac mixtura din inima proaspata,inca calda,din care inca nu sunt elaborati proteinele.La 800 grame de inima,bag 200 grame de spaniac,20 grame de sare,15 taplete de spirulina,o banana,si o jumatate de ardei rosu.
Astia toate bag in masina de tocat cu sita de 2 mm,de 2 ori,dupa care le bag in pungi,si direct la camera de frig de socare la -26 grade.

mananca cu mult mai mare pofta

si in primul rand,am uitat sa scriu,este o sare amestecata cu nitrit,care blocheza eliminarea proteinelor din carne.

nitrit,nu este nitritul din acvariu.e un fel de conservant la industria carnii.60 grame la 100 kg sare,din care 20 de grame la un kil de carne

este vorba de nitratul de natriu.se foloseste numai in industria carnii.intra in reactie cu proteinele,pe care le leaga,si in cursul acestei reactii ea se neutralizeaza.
Nu exista in lume,nici un preparat de carne,in care nu este folosit.

Oricum ar fi, cantitatea de nitrit consumata pe zi nu e daunatoare daca nu se acumuleaza, si mai ales ce e mai important de aflat e daca se manifesta cumva asupra pestilor in timp de cativa ani. Asta va fi ceva mai greu de aflat.

Dupa opinia mea sarea, mai ales cu nitrit sau nitrat nu-si are rostul. Sarea coboara temperatura de inghet a apei (din carne) si atunci e necesara o temperatura ceva mai mare de inghet. Si "tulbura" echilibrul mineralelor in organism. Iar nitritii si nitratii au rol de conservant, una din proprietati e sa pastreze culoarea mai rosie a alimentelor din carne sa nu vada clientul ca ce pune in farfurie nu e proaspat icon_biggrin .

Proteinele nu au unde sa se duca, ele constituie fibra musculara. Eventual se pierde ceva apa din tesut in timpul prepararii, iar asta inseamna ca procentul de proteina creste pentru ca s-a piedut apa.
